I remember collecting baseball cards and even pogs as well as coins. I think it could help if stores sold decorative stamp albums to hold the collections. Records have gained some renewed interest as record players are being sold now which don't have quite the high quality but are mass accessible. Also, more special edition stamps that have limited release, just like artwork, would at least drive demand for the limited stamps and spillover to more common stamps while a collector was at it. Other than that, it would help to have some celebrities with the renewed interest.
